Chocolate Peanut Butter Fingers
- 3 sticks butter, sliced
- 1 ¾ cups graham cracker crumbs
- 1-cup chunky peanut butter (Skippy Super Chunky Honey Nut – great if you can find it but I can never find it)
- 2½-cup confectioner’s sugar
- 1-teaspoon vanilla extract
- 1 – 12 oz package semi-sweet chips
- ½ cup chopped peanuts (Optional – I don’t use)
Place 2 sticks of butter in an 8-cup glass measure or bowl and microwave on HIGH for 1 ½ to 2 minutes or until melted. Stir in graham cracker crumbs, peanut butter, confectioner’s sugar and vanilla mixing thoroughly. Spread mixture into a 9 x 13 inch baking pan.
Place chocolate chips and remaining stick of butter in a 4-cup glass measure or bowl and microwave on MEDIUM for 2 to 4 minutes, stirring every minute until chips are soft and shiny. Stir until mixture is smooth, then pour over peanut butter base. (Sprinkle with nuts) and refrigerate.
To make slicing and removal from dish easier, refrigerate for only 15 minutes. At the time cut into ½ to ¾ inch square; there should be about 60 – 65 squares and return to refrigerator until completely firm.
When ready to remove the dish, allow to stand at room temperature for 5 to 10 minutes, then re-cut along previous lines, and remove to paper liners or a cookie dish.
