Nanaimo Bars
- ½ cup soft butter
- ¼ cup white sugar
- 5-tablespoon cocoa 1-tablespoon vanilla
- 1 egg
Mix together and cook in double boiler (I just do it in the pan directly on the burner but you have to be careful) until mixture looks like custard. Remove from heat. Combine 2 cups (32 single graham cracker wafers) crumbs, 1-cup (fine cut) cocoanut, and ½ cup walnuts. Add to first mixture. Pack in a greased (with butter) square pan.
Then combine ¼ cup butter and 2 tablespoons vanilla custard powder (use Birds Eye – not instant). Combine this with 3-tablespoon milk and 2 cup icing sugar. Make into a smooth paste and spread over the first mixture. Let it harden for ½ hour. Melt 4 squares semi-sweet chocolate and 1-tablespoon butter. Pour this mixture on top. Let stand for 24 hours. I keep it refrigerated.
