Old Fashioned Strawberry Jam (delicious)
- 5 cup strawberries
- 5 cups sugar
- ½ cup lemon juice
Wash strawberries, hull and drain thoroughly. Heat the sugar in a 325 degree oven for 15 to 20 minutes. Place strawberries in a large sauce pan. Crush lightly to extract some of the juice. Cook 10 minutes over low heat, stirring occasionally. Pour the hot sugar over the hot strawberries. Add the lemon juice. Bring to the boil, stirring often. Boil 8 minutes over a high heat. Pour into hot sterilized jars, cool slightly and seal.
The last time I made this I could not get it to set – berries were ripe – boiled for 20 minutes but temperature would not go to 220 degrees (jam stage) sat at about 218. But good anyway – a little runny but nobody seemed to mind! Kate and I picked the strawberries that day, gave two jars away.
