Oven-Roasted Applesauce (Yummie)
- ¼ c. brandy (always good when it starts like this!)
- ½ teaspoon ground cinnamon
- Pinch of ground cloves
- 1 teaspoon freshly squeezed lemon juice
- ¼ c + 2 tablespoons packed dark brown sugar
- plus zest of 1 lemon
- 2 tablespoons salted butter
- 3 Granny Smith apples – peeled, cored and cut in 1/8ths
- 3 Macintosh apples – peeled, cored and cut in 1/8ths (you can use other apples but they should be the firm
- type and not really sweet)
- Pinch of salt
Oven 375. 12 X 14 (or an 11 X 17 will do – just any old oblong pan – not a square cake pan) Mix all the ingredients except apples (I think that I put the pan in the oven for a bit to melt the butter). Put apples in sauce and toss to coat with sauce (smells great). Roast for 30 minutes – then it says puree the sauce in a food processor – but I like hunky apple sauce to I just mash it with a potato masher – serve warm.
