Seven Layer Salad (very good)
- Break up 1/3 – ½ head of iceberg lettuce on the bottom of a large bowl (I use ½ to ¾)
- Make layers of the following on top of the lettuce:
- 1/3 – ½ big bag of frozen peas (I like to use the tiny peas – can use a whole small bag)
- 1 red onion, thinly sliced
- 1 green pepper, thinly sliced
- 3 good size carrots, grated
- Cheddar cheese, grated (as much as you like)
- Peanuts, unsalted
- Golden raisins
- Dressing
- 8 – 10 pieces of bacon, crisped, drained and broken into pieces, sprinkle over top of dressing
Dressing: ¾ - 1 cup Miracle whip, sugar to taste and 3 tablespoons of milk to thin the miracle whip to the consistency of Elmer’s glue
- Cover and refrigerate over night
I sprinkle the bacon bits on just before I serve so they do not get soggy. You need a fairly large bowl for this and the amounts really depend on your likes – can leave one of the layers out if you don’t like it or can substitute layers. It is the one time I use Miracle Whip dressing – it doesn’t taste the same if you use mayonnaise.
