Spiced Mixed Nuts
- 2 large egg whites
- 2 ½ tablespoons Old Bay Seasoning
- 1 teaspoon chili
- ½ teaspoon salt
- 2/3 cups sugar
- 2 teaspoons Worcestershire
- ½ teaspoon cayenne pepper
- ¼ cup butter – melted (1/2 stick)
- 6 cups mixed nuts (walnuts/pecans/ cashews/pistachios)
- 1/3 cup Parmesan cheese, finely grated
Preheat oven to 300. Line 2 baking sheets with foil or parchment. Grease lightly and set aside. Position rack in center of oven. In a large bowl, beat egg whites until foamy, gradually add sugar, beating to a loose meringue like texture. Beat in Old Bay, Worcestershire, chili, cayenne and salt. Add nuts and butter. Stir well to coat evenly. Add Parmesan and stir again (softly). Divide nuts between baking sheets – spread evenly. Roast for 30 to 40 minutes to golden brown (not dark). Rotate sheets for even baking. Cool completely. Store refrigerated in airtight container for up to 3 weeks.
