Creamed Chicken Supreme (Granny’s)
- 4 tablespoons butter
- 4 tablespoons flour
- ½ teaspoon salt
- 1/8 teaspoon nutmeg
- 1-teaspoon season-all (McCormick)
- 2 cups milk
- 2 cups cut-up chicken (I use as much as I like – often a whole one)
- 1 tablespoon bell pepper flakes
- Dash mace, poultry seasoning, and white pepper
Can add any other vegetables that you like – Kate likes mushrooms, peas, real peppers.
Melt butter; blend in flour, salt and spices. Cook over low heat until smooth and bubbly. Remove from heat and stir in milk. Bring to a boil and cook for 1 minute stirring constantly. Stir in chicken, pepper flakes and reduce heat to lowest position (or use double boiler) and let stand for about 15minutes, stirring occasionally. Serve hot in patty shells, or over toast, waffles or rice. I often make dumplings with this dish( just plop the dumpling mixture on top of the bubbling creamed chicken (reduce heat even further so it won’t burn) and cook as directed – I use Bisquick.
