Huevos Rancheros

In a small skillet sauté 1 Tbsp of minced onion (I use as much as I want probably about ½ c and only chopped) and 1 fresh hot green pepper minced (jalapeno – I don’t use a whole one just probably about four slices) and 1 small clove garlic minced (I use 3 or 4 cloves) in 2 Tbsp olive oil until onion is golden. Add 1c. tomato sauce (1 regular small can), ½ tsp oregano and ¼ tsp salt or to taste. (I also add some minced green Mexican frying peppers – about ½ of the small can). Simmer mixture for 3 min. and then break 4 eggs over it. Cover the skillet and simmer mixture for 7 minutes or until eggs are just set. Serve the huevos with tostadas.
