Huevos Rancheros, Tony’s
Coat frying pan with thin coat of olive oil. Add diced potatoes (can dice as small as you like) and as much as you like, fry and turn the potatoes as needed to keep them from burning scraping the crisp bits from the bottom of the skillet. Add additional oil and butter only if absolutely necessary. Add salt and pepper to taste, chili powder to taste for extra spice. Add diced onions (once again as small as you like, not really big hunks and as much as you like per serving) continue to sauté and scrape the potatoes and onions from the bottom of the pan until they are deep golden brown. Meanwhile heat a tortilla and top with a layer of black beans (can use refried beans as well), heat (microwave works). Top with onion and potato mixture. Fry one or two eggs, easy over or to your yolk taste. Grate 3/4-cup cheese (cheddar, Monterey Jack or a combination of both), chop a green onion and dice a tomato while eggs are cooking. Spread about half of cheese over top of onion mixture, top with eggs. Secret ingredient – do not leave out - Hatch Huevos Rancheros Original Sauce. Heat approximately 1 cup and pour over eggs. Top with cheese, green onions and diced tomatoes. Serve immediately. Increase amounts as needed for multiple servings. Fabulous.
