Granny’s Meatloaf with Mum’s variations
- 1-pound ground beef
- ½ pound ground pork (I don’t use – I just use beef)_
- 1 can tomato sauce - 8 oz.
- 1 egg, slightly beaten
- 1 ½ cups soft bread crumbs (I just cut up bread)
- ¼ cup chopped parsley
- 1 ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon Worcestershire sauce
- ¼ cup chopped onion – I just cut up an onion – kind of medium
Combine all in a bowl – mix with hands – quite a mess – Pack into a loaf pan – says to grease it but I don’t. Bake at 350 for about 1 hour.
Strips of bacon across top before cooking - delicious
Sauce: 3 tablespoon brown sugar
- ¼ cup ketchup (or as it was called catsup)
- ¼ teaspoon nutmeg
- 1 teaspoon dried mustard
Mix all together and put on top five minutes before finished cooking can be done alone or with bacon
Instead of a loaf pan put in a Pyrex bowl and cook – turn out onto plate and then cover with mashed potatoes – serve in wedges.
Put half of the mixture into the loaf pan – add stuff in the middle – cheese, roasted peppers, mushrooms, etc then put remainder of mixture on top and cook as directed.
Gary’s variation – line a cookie sheet with tin foil. Spread meat mixture over sheet to form a rectangle. Spread “stuffings” evenly over meat rectangle then roll up in jellyroll fashion. Cook on cookie sheet.
