Oven Barbecued Chicken and Biscuits
- 2 ½ - 3 lb frying chicken, cut-up (I use chicken breasts –about 6 halves)
- ¼ teaspoon salt (I don’t use this to sprinkle on chicken)
- 2 tablespoons firmly packed brown sugar
- ½ tsp salt
- 1 garlic clove, minced (I use 2 or 3)
- ¼ c. vinegar
- 2-tablespoon instant minced onion or ½ c. chopped onion (I just put in what I feel like)
- 1/8 tsp pepper
- ½ cup ketchup
- ¼ c. water
- 1 teaspoon Worcestershire sauce
- 8 oz can of Pillsbury refrigerated buttermilk or country style biscuits (or any style you like)
- 2 tablespoons grated Parmesan cheese
- ½ teaspoon Italian seasoning (best to use this) or oregano
Oven – 375. In an ungreased 13x9 inch pan, arrange chicken pieces skin side down (if they don’t have any skin – be sure to find out which side it was on!); sprinkle with ¼ tsp salt (I don’t do this) just plop those suckers in the pan. In a small saucepan combine the next pack of ingredients (both columns – brown sugar through Worcestershire sauce) – heat to boiling – pour over chicken and pop into oven – Hansel and Gretel like. Bake uncovered for 30 minutes. Turn chicken over during this time and spoon sauce over as well – if the sauce gets too thick add 2 – 3 tablespoons of water to sauce –
Move chicken to one end of the pan (this is why you need a 13x9 where the chicken swim in the pan rather than an 8x8 where they would have a better fit). Separate biscuits – dip each into sauce on both sides then place in pan in the cleared space that you made. Combine Parmesan cheese with Italian seasonings and sprinkle over biscuits (oh I can taste this already – I am hungry) Return to oven and continue baking for 15 to 20 minutes or until biscuits are brown. Eat fast before anybody else can get at the biscuits.
